Need some advice on the transactional mailer addon, and specifically unsubscribe statuses.
Should a contact unsubscribe from all on a marketing email, would a transactional mail still be sent or is the subscription status global?

Yes, transactional emails are sent to unsubscribed contacts, too, see here: “HubSpot will deliver a transactional email to a contact regardless of their quarantine status, subscription status, or double opt-in status.”
