I would think this would be simple, but I can not figure out how to remove a document link I created in a template.

After navigating to your templates (Menu > Conversations > Templates) and selecting the one you want to change, simply hitting the delete key a few times should work:
If it doesn’t, highlighting and deleting text around and including the document link usually works.
