You can customize the record create form to include new properties yes, yes: Customize the create form for each object
It’s not possible to pre-populate a field with a value however, if that’s what you’re referring to. You could consider using a deal-based workflow to pick up new records and automatically fill a field after record creation. It would be something different but could serve the same purpose.
