Is it possible to categorize or tag an email in the activity stream? How can we segregate just the prospecting emails from general follow ups? We have a report we are using to track the outgoing prospecting emails and in the report I can’t tell which is just a follow up for something else and which is new outreach.

Unfortunately not, no, this is not possible. HubSpot doesn’t support creating activity properties or tags.
