I am trying to remove email addresses for contacts where I know they aren’t correct. I do not know the new email so I would like to update these emails to NULL.
I tried bulk update but the email field is shown as available in the list of contact properties…

That’s correct and expected behavior as this would let you set the email of multiple contacts to the same value. The email address is a unique identifier in HubSpot however and this could cause contradictions.
If the number of contacts is small, I would recommend manual editing, especially if the time needed would be ~30 minutes. For anything beyond that, you could consider testing exporting contacts with their contact ID and then attempting to empty the email field upon import via the contact ID. I’m not sure this will work, hence my recommendation to do it manually. It might simply be faster than trying to find a bulk solution.

Hi, thanks for that. Import does not work since it does not allow to import blank/NULL values.
I have several hundreds of records. I have to find another solution other than manual

Have you considered exporting these contacts then deleting them before re-importing them without email address?
