Is there a way to populate a spreadsheet with contacts at the end of a workflow? If the contact has gone through the workflow and not responded we would like to track that in a spreadsheet. Is it possible?

You may be able achieve this using the Google Sheets Integration. HubSpot workflows will create a new row or update an existing row in your selected spreadsheet each time the workflow action triggers.
Another option (if you don’t mind some manual work) would be to add the unegaged contacts to a static list in HubSpot using the “add to static list” workflow action. This help article explains how to add this action to a workflow. Once you have the static list, you could export it to Excel.

Kristen I think your Google Sheets Integration suggestion is ideal.
Just add it to the end of the workflow!
