i created a form for collecting contact info. include phone number or some others. i want to know if the same person submit twice form, just the phone number is different. does the phone number will be coved by the sencond submission?

Yes, a second submission will overwrite values on the contact record if they’re different. You can always access the value history of a field by following these instructions: View a record's property history
In the activity timeline of a contact, you can also filter for form submissions and look at each one individually, with their (old) values.
