Is there a way that we could create a custom Sub-category property, with specific categories under each default Indsutry on HubSpot?

Yes, with a separate/additional property for sub-industries – and by leveraging these conditional options, available in Professional and Enterprise portals: Limit available options based on a controlling property
Within the same property, or in a free / Starter portal, unfortunately no.

I forgot to attach an example, we are opting for something like the below:

|---|---|
| Fishery | Aquaculture / Fish Farming Technology |
| Fishery | Aquaculture / Krill |
| Fishery | Aquaculture / Salmon |
| Fishery | Fisheries Association |
| Fishery | Seafood |
| Fishery | Seafood Association |
Basically drop-down options for a specific industry.
