I’m new to HubSpot and was wondering whether or not it was possible to log the average call times that our sales team has with clients for my sales dashboard.
Having looked around the several dashboards/analytical tools I haven’t came across anything thus far.

There is a report in the report libary for call duration. Navigate to Menu > Reports > Reports > Report library and search for “Call duration average by rep”.
If you want to see this by company, you would need a Professional or Enterprise subscription to create a cross-object report across Companies and Activities. (Custom reporting is limited to those HubSpot subscriptions.) This is what a starting configuration (left sidebar of the report editor) of such a report could look like:
