Gravity Forms Mapped to a Multiple Checkboxes Property

We are working on mapping all fields from our custom website forms through Gravity forms to our Hubspot contact properties. Currently, our biggest dilemma is mapping a field with multiple checkboxes into the Hubspot contact property. For instance, if there is an option to receive marketing about topic 1, topic 2, and topic 3 we want to transfer that information to Hubspot without overriding any values that might already exist in that property.

In short, how do you append values to an existing property value in Hubspot through Gravity forms? Is this even possible? Is there a hook or anything anyone knows of that we can intercept and alter the data before it gets to Hubspot?

IF not is there a workaround to accomplish this by some custom workflow?

You could store the values in a secondary property and then copy to the primary property and choose whether to update or replace the existing values so long as both properties are the same type. Otherwise by default all forms will be set to override the value that exists in the property.

Is that the only way? Is there really no way to just map custom fields from the gravity forms to hubspot?
