If I have a contact that is at Lead, MQL stage or later, and they decide to come to the site and fill out a contact us form, or gateable content form, which has a hidden field to set lifecycle to Subscriber…will that overwrite the stage for my contact, or does HS prevent the backwards step from such automation?

Lifecycle stages are only meant to progress forward and forms are following this logic. A hidden Lifecycle stage field with the value “Subscriber” will not reset any MQL, SQL, Opportunity etc. value.
(If you wanted to do that, it would only be possible manually or by clearing the property in a workflow first.)
