Hi, our team is looking to set up permissions so that our sales reps have access to deals that are assigned to them and can change information within the deal including stage, priority, notes, etc WITHOUT being able to change the deal owner. Is this possible?

Yes, this is possible but requires an Enterprise subscription: Manage view and edit access for properties
