Hi I remember that I created a overdue tag and it’s tagged the Closed won or lost deals, automatically. I don’t know how to untag it. Please help me to not create an OVERDUE tag.

In your HubSpot account click the settings icon in the main navigation bar and go to Deals > Pipelines here you can add or remove deal tags :

That depends on the exact criteria you chose for your overdue tag. Can you check under Settings > Objects > Deals > Pipelines > Deal tags and share a screenshot?
If you set your tag criteria as shown below, it should disappear from closed won and lost deals:
