Is there a way to utilize a workflow so if a user sends an email along with tracking that will add a Task to their to-do list to follow up if that email has not been opened in x amount of days? I can see how to add the email open as a trigger for a workflow, but not how to say “if NOT opened after 5 days” add this Task. Thanks!

This is easiest done using workflow goals. You would simply enroll contacts when the email was sent, then add a delay for 5 days, then add the task.
Additionally, you would set up a workflow goal for “Recent sales email open date is less than 1 day ago”. Use goals in contact-based workflows
A sales email open would remove the contact from the workflow immediately, meaning they wouldn’t see the delay through to the end and to the task creation.

can this be done for sequences also? if someone clicked on a link in a sequence that went to a document link, or a webpage blog, for example, can we get an automatic list of people who did this - or a task created to follow up?
