We want to create segmented lists in HubSpot based on interest topics using WordPress tags. Is anyone doing this?

The trouble is that the WordPress tags don’t exist in HubSpot per se, but there may be a way that you can accomplish this using page views.
If I were doing this, I would create an Event in HubSpot based upon a customer visit to a category/tag archive page (for example https://yourdomain.com/tag/yourtag/ ), and then create lists based upon that event. That way, if a visitor has looked for more relevant content by clicking the tag, you can segment your list based upon that action.
