Hi,
I understand that the lifecycle stage property has the option for subscriber, however, it doesn’t let me mark the contacts that have unsubscribed.
I’d like to know if I can update this property and add an option for the unsubscriptions.

The Lifecycle Stage Property (that has an option for Subscriber) is a HubSpot Property and cannot be edited.
You can find all Contacts that have Unsubscribed by creating an Active List.
Contacts (top menu) > Lists (drop down menu) > Create List (orange button, top right)
Choose “Contact Based” and “Active List”.
The filter based on Email Subscriptions (see image).
This will let you filter all unsubscriptions automatically.

The “subscriber” value for Lifecycle stage can be a bit misleading. It doesn’t say anything about whether a contact has actually subscribed to anything, whether they haven given their consent or withdrawn it. It is merely the default value for Lifecycle stage.
If you want to manage your contacts’ subscriptions (opt them in, unsubscribe them etc.), the steps are explained here: Manage your contacts' messaging subscriptions Completely independent from the lifecycle stage.
If you want to fully unsubscribe a contact, here’s how you can do that: Unsubscribe an individual contact from receiving all email
If you’ve set up subscription types and maintained that information for all contacts, you can build subscription lists. Navigate to Menu > Contacts > Lists > Create list > Active list > filter for Email subscriptions
and select the subscription.
