I work directly out of gmail to communicate with prospective customers and the activity gets tracked in HubSpot. Are there any automations for task creation I can set up? For instance, it would be great if every time I sent an email there was automatically a task created to follow-up in 7 days if I do not receive a response.

The best tool for this are sequences: Create and edit sequences
In short, they let you define a series emails that are sent until the contact replies. You can also include manual tasks.
Sequences can also be started with the HubSpot sales extension for Chrome: Use sales tools in Gmail with the HubSpot Sales Chrome extension
