So I have Survey Monkey as a connected app. When somebody submits a survey, HubSpot automatically creates a new contact with the email they submitted. However, I would also like it to populate and/or update their hubspot phone number. Is this not possible?

Hey there @BEvans87 - great question. The standard integration does not push phone number as you might expect. The out-of-the-box SurveyMonkey–HubSpot integration does not automatically map arbitrary survey responses (such as a phone number) to the corresponding HubSpot contact property. So, a phone number provided in a survey will appear in the activity timeline but will not automatically update the contact’s “Phone Number” field (source). Other users have had to set up zaps through Zapier to make this happen. Sorry it’s not a happier answer!

You’re right, the native SurveyMonkey + HubSpot connector only brings in the email address to create a contact.
Other fields like phone number show up in the activity timeline but don’t populate HubSpot properties automatically see HubSpot doc here:

The usual workaround is to use Zapier or a similar automation tool. You’d map the phone number answer from your survey to the “Phone Number” property in HubSpot. This gives you control over which fields get updated and avoids having data only stored in the timeline.
