Say, I sell service X, Y and Z. The potential client completed a form and marked service X in the drop off menu. Could hubspot send an automated email according to the clients answer to said drop off menu? (A different mail for each service)

Yes, this would be done with workflows and automated emails, available in Marketing Hub Professional: Send automated emails in workflows
You would enroll contacts based on the form submission, branch on the field that stores X Y Z and set up an email in each branch.
