It would be awesome if there was a feature to retrieve the analytics data for email templates in HubSpot via API, specifically the number of emails sent, opened, and clicked.

This would be very useful. Right now we can pull email sends, but there is no associated template or sequence in the email. The best that can be done is to pull the email content and reverse engineer it into a template (painful at best).
