Is it possible to report on a lists engagement activity, such as how many became engaged or unengaged over a period of time?
"How many of my contacts in a particular list became unengaged from Jan - Nov?’

Not retroactively, no, this is not possible inside of HubSpot.
You could check how many contacts from a specific list are unengaged now by looking at the Sends since last engagement property. It’s not possible however to check this information historically for a specific time frame inside of HubSpot.
One option to approach this would be exporting the property history for Sends since last engagement and run this analysis in Excel to answer your question. The export file includes date stamps.
