Why do we have to have a sinlge object report to be able to use quick filters on dashboards?

Not all report types support dashboard filters, see here: Use dashboard filters
By clicking Advanced filters → Quick filters, you should however be able to add quick filters that work on custom report builder reports with multiple data sources as well.
