Is it possible to retrieve specific properties on associated objects via the API?
Example: Use the Associations endpoint on the API to retrieve all deals associated with a specific contact, and return propertyA on each associated deal

You’ve touched on a limitation. You’ll need to make two calls to achieve your goal. One option is to use the batch Deal endpoint — Read a batch of deals by internal ID.
POST /crm/v3/objects/deals/batch/read
In this case, there is not a unified or all-in-one endpoint for what you want to accomplish.
