logging emails from another mailbox

I am new to Hubspot so looking for help. How do I log emails to another mailbox that are added as c.c on emails to contacts from different senders both inside and outsi of my organisation? I am trying to track conversations that need following up.

If the email is already associated to a contact, you can manually associate it with other contacts: Associate activities with records
