Currently, I can create contact/company lists based on
- Internal Meeting Notes
- Call notes
- Email body
- Note body…
But not based on Task notes. This is against any logic or systematicness, so please fix this.

No you can create on Task Notes also, Just Use the right filter, Go to activity properties - Under tasks take Notes - take filer as has ever contained exactly
make a particular string as a standard while writing the notes in task - you are donw now
