Is it possible to tag an email not only to a contact and company but also to a specific deal?
Or is every deal associated with a given contact show the email history even if related to another deal?

Hi! Just click on the associations, and search for the relevant deal that you want to associate it with.

When you click on an activity in a contact record, you should always see this option at the bottom right corner:
Fictional data.
This is where you can select which associated objects to log this activity to as well.
You will notice that HubSpot will automagically associate some activities. This article gives a good overview of what’s associated and what not.
