It would be super helpful if you could edit an email template in a sequence and this new version would automatically be updated for all the contacts already enrolled in a sequence.

Are you sure that isn’t already the case?
A sequence contains templates, if I change a template, that change is reflected in the emails that will be sent in the sequence, see the two screenshots below:
The email in the sequence before I changed it.
The email in the sequence after I changed it and added “Just adding some extra text to see if it shows up” to the template.

I mean for people who are already enrolled in the sequence. If you make an edit and you have people enrolled, that change will not show up for people already enrolled.
