In Contacts, the email field is defined as single-line text. It could have multiple emails delimited by a comma. When clicking on details, I see the property values split and listed as we see in the image attached.
How do we accomplish the same for a custom field?

Email is a default property as well as a unique identifier in HubSpot. This type of funcitonality, you will not be able to get in single-line text field property.
When a new form is submitted. For single-line text field type, the property will get updated each time the value in the submissions changes.
If you want to include all the values, you can choose to make the field type as Multiple Checkbox Screenshot by Lightshot this allows to store multiple values in a single property and you can see when a certain value was added in the History tab Screenshot by Lightshot
Please note you will need to put the possible choice out of which your leads will be choosing the options.
