Can you change/add the lifecyle objects/names if you do not have the enterprise option, and only have the professional one?

Custom lifecycle stages are available in all plans, see here: Create and customize lifecycle stages
Custom objects and any related features require an Enterprise subscription: Create custom object records
In other words, if you’re on a Professional subscription, you can’t access anything related to custom objects.
