We use Hubspot to sell vacation packages. Is it possible to upload a rate sheet for hotels so that when an arrival and depature date is defined the hotel price will auto calculate in the products?

With a Professional subscription, you should have access to custom calculation properties: Create calculation and rollup properties
You would approach this by creating a first property that calculates the time between arrival and departure and a second one that calculates the eventual price.
You can create these as a deal properties or product properties.
