I have a sales@ email I have setup in a channels in hubspot. I’m wondering if it’s possible to set up a lead scoring point.

Not directly, no. However, you could create a conversations-based workflow which enrolls conversations from a specific inbox and then sets a contact property value – which can then be used for scoring.
It’s not possible to specify a team email address, only the the inbox, as far as I know.
