I have worked out how to change the background colour of emails in Settings however I can’t figure out how to apply these colour changes when I go to write an email as the default colour keeps coming up with no option to change.

Which edition of HubSpot are you using? Are you using the drag and drop editor?
If you click on the ‘Design’ tab in the top left, can you change the background colour there? (See below)
