we have a freelancer in India that will help us get more efficient with sequences, ticketing and tasks in Hubspot. Could we adjust their permission so they only can view and edit own customers and companies (which will be very very few) but still they could help us (the company) to create and develop automations that we would use on all our customers?

Yes, HubSpot has pretty detailed permission options for those use cases: Manage user permissions
When you follow the steps linked above, you’ll find permission options, specifically in the CRM and Sales tab of the permissions editor.
You can specify both record and tool access.
