Hello I see some of the columns in my company record view have this option to add conditional highlighting as pictured in the screenshot. Is this only for number and date columns? we want to add it to a property in view that is a drop down select but its not showing

If you’re not seeing it, it’s not available yet - you would either have to be patient or request it in the ideas section of the community.
Alternatively, directly in the property settings, apply color highlights for your select properties. The options are shown directly above the list of selectable options in the property settings.

I can confirm this feature is currently only available for number, currency, percentage, and duration property types.
As a Workaround, I would recommend editing your drop-down property to show a Badge with a color similar to the screenshot below:
And the View will look like this:
