This seems to be resolved now. We're now seeing the emails logged to the 'to' recipient.

If I delete an email in my gmail inbox, will it remain in HubSpot?
I have hundreds of emails logged and tracked in HubSpot using the extension. If I delete my emails in Gmail to free up space, will it delete my emails in HubSpot too? I need these emails on the contact records.
