While the example uses a single value for all deal stages, 'SET flag' workflow could be cloned and different durations applied for different deal stages.
HOW IT WORKS This pair of workflows respectively update a custom property [Too long in deal stage] as deals 1) remain in a deal stage for longer than the permitted time [SET] and 2) move into a new deal stage [CLEAR] NOTES ON CONFIGURATION
