Hi, I would like to setup my Hubspot instance so that it syncs with contacts in SFDC (not leads).
I am wondering what happens when a net new contact is created in Hubspot from a form submission and they enter abc@gmail.com as their email... which account will it get associated to in SFDC?

In the Hubspot / Salesfore integration settings you can choose to have a new record sync as a Contact and not a lead. But keep in mind that Contacts must have an Account unless you have configured your instance to use Person Accounts. As a result, there must be an associated Account for the Contact to relate to.
With regards to where the association will take place that has more to do with your Salesforce workflow rules or integrations through something like LeanData. This really isn't a question we can answer as that routing will be handled by Salesforce.

When faced with this issue, many companies create a 'dummy' account for that email address until a professional email is obtained.
This Workflow enrolls contacts when the Associated Company is unknown. Then, you add a 5 minute delay & set the settings to the Workflow to unenroll if the enrollment criteria is no longer true. After that delay, add a create record action to create a dummy company. Typically, name = First Name + Last Name. Then this can create & sync with Salesforce.

Hey Lauren - I am intrigued by your workflow suggestion.
You said that you create this dummy account until a professional email is obtained. Once that professional email does roll in, do you have some sort of automation in place to merge the existing freemail contact/dummy account with the new professional contact/company?

The way net new contacts created in HubSpot sync to Salesforce depends on your sync settings. If you head to Settings > Account Setup > Integrations > Connected Apps > Salesforce Integration > Sync Settings tab, you'll be able to configure whether you want those net new HubSpot contacts to create a lead or a contact in Salesforce:
However, I don't believe that these contacts synced from HubSpot will automatically be associated with the respective account in Salesforce (that would be a manual association step in Salesforce once the contact has been created).
