I would like to create a workflow that tracks bids for our company, we regularly tender for work within both public sector and privtae sector clients.
The idea is that we can track the progress of the bid, assign tasks to members of the team, create deadlines for important milestones and submissions dates, ensure we can't move through the workflow until tasks have been completed, have several bids running at one time, etc. In something similar to a gantt chart to show all required actions, timelines, outstanding issues, etc.
I'm currently struggling to understand what criteria I need to include (or how to include it) to relfect this.
What level of subscription do you have for HubSpot? It would be possible to start tracking this information either using a Custom Object labelled something similar to 'Bids' or using the Tickets/Deals object & pipelines to track individual Bids along a pipeline.
You could use workflows for automatic task creations & team assignments etc. You would also use pipeline rules to block when a Bid can move to the next stage. To block Bids moving throgh the process based on Tasks being completed will also require some additional set up, such as creating Deal/Custom Object properties based on each Task which are ticked as 'Completed'.
To show this information in a Gant chart in HubSpot is not possible. However you could pull this data from HubSpot using an integration into a 3rd party tool such as Google Sheets using an app like Coefficient. I did look to see if Airtable or Softr could be a solution to pull data from HubSpot in to and display data in a Gantt Chart format, however this doesn't look possible currently if the data sits at the Deals/Custom Object level.

I would recommend creating custom pipelines to track bids from identification to submission. Utilize tasks, deadlines, and dependencies within each stage of your pipeline.
