As far as I now, this can currently be achieved (natively) only with the help of additional date and calculation properties: You'd have to create a today's date property (ideally using Operations Hub Professional or Enterprise, if you don't have that subscription follow this workaround) and then create your own calculation properties for each deal stage: https://knowledge.hubspot.com/properties/create-calculation-properties
First property: If deal stage is currently stage 1, then display time between Date entered [First stage] and today, if not, then display property value of Latest time in stage 1
Second property: If deal stage is currently stage 2, then display time between Date entered [Second stage] and today, if not, then display property value of Latest time in stage 2
