Sequence breakage without affecting existing data

when an sdr inbox was disconnected and when a step in sequence (email sent) is executed - it was sent from admin@company.com,
He later connected the email back, but there are steps again in sequence for email sent , will it be sent from admin@company or from sender itself.
if it is sent from adnin@company  we areplanning to pause and unenroll all contacts, if we do that renroll in same sequence , will it start from first or from step it was last in .

what is the best practice -should i sent  unenroll and create a new seaquence with steps yet to come, but here also contqacts are in multiple steps, how do i vulk export which contact is in which steps.
