I'm currently trying to set up a HubSpot Sales portal where the field representatives will only be capturing the phone number of a customer. We don't want to capture any first/last name or e-mail of the person, only the phone number in order to comply with agreements on the sharing of personal information. Is there a way to turn off 'First Name', 'Last Name', and 'Email' as default fields for a contact if all we want to capture is the phone number in HubSpot?
Not really, no - the email address is a unique identifier and thus placed prominentzin a lot of places where it cannot be removed. Similarly, the first and last name are maintainable in places where they can't be removed. There aren't any specific settings for this unfortunately.

Then, you can export submissions via this button when viewing the form:
All this said, it does not appear to create contacts when the form is submitted. So, if you just want to collect phone numbers, this could be the way to do it. If you want to create and update contacts, you'll need to collect email addresses too.
Feel like we should be able to capture what we want on our contacts, even if that doesn't include first/last/e-mail - there are other ways of identifying a person (phone number, what most businesses use nowadays anyway...). I'm having to force my field teams to enter a phone number into the first name and copy/paste it into the phone number field, entering it twice.. Will submit an idea.
