This feels like a dumb question, but I'll throw it out here - how do you get a date field on a quote? Like we want someone to provide the date they sign (or have it filled in when they sign), and then state that the contract is valid for 1 year. This seems simple, but I've not found a way to either let someone put in a date, or show them the date they signed the agreement. It'd be great to include that as part of the terms of the contract.
I'm aware it shows up on the PDF version of the file, but this seems like a pretty basic feature that's missing.
If you need a solution quickly you could achieve this using our document automation app for HubSpot called Portant. It gives you more control over how your documents are personalised because you can add any property from HubSpot to personlise your document (including the time the document was signed or created). I made a short 60s video about our app here:
We also use Google Docs and Slides as the document templates so you have much more control of the document formatting.

Agree, seems like a basic feature that can be added. Share the idea on on the idea portal as well. A workaround can be adding a custom deal property and use it in the deals when the contract is signed. It's manual but will fulfill the purpose or else try some third party esignature app like DocuSign or HelloSign. They might have this facility.
