If you have a view that shows all pipelines, you can pin that view. When you navigate back to Menu > Service > Tickets, you should then see all pipelines.
For me, for example, the "All tickets" tab will show you all pipelines by default.
If you want to make this change for an existing tab/view, click "More filters" (center of the screen), remove the filter options for Pipeline (in the sidebar that pops up) and then save the view (top right of the screen). You can then make this view a default.

Is it possible to set the Service overviews to "all pipelines" by default?

Thank you but that is not the case, if you look below you can see that there is no filter for the pipeline in the view itself, the filter is on top on page lvl.
