When I create a form, I can only use the Ticket properties if the type of form I’m building is "Legacy Form Editor."
Am I missing something, or is it not possible to use properties other than those for Contacts and Companies in the Form Editor? Is there any possible workaround? Thank you.

Generally, I would be surprised if the HubSpot product team did not have this on their radar yet. The workwaround would currently be to use the legacy form editor. Alternatively, you could store information in contact fields, then use a workflow to create a ticket record based on those contact field values.
Have a great day!
