We're setting up an internal ticketing system and wanting to isolate this with ticketing integration with MS Teams. As we're opening this to the whole business, we're wanting to isolate the fields available and what can be selected. For example, we have a number of pipelines and status' that the rest of the business don't need to see and only want to give them the ability to select from about 3x. There is also fields in there that are irrelevant such as 'Company', as this will be for internal only. If there is the ability to even add Tags so we can help split this down via teams with a workflow, it would make a big difference to the entire set up.

Could you post a screenshot of the form you are trying to edit? It sounds like you might be referring to the available fields when setting up a form channel in the conversations inbox. If so, do you want to prevent users from being able to create forms that will create tickets from the conversations inbox?
