I understand that editing the tasks in an already active sequence won't affect the contacts already enrolled but is there a way to quickly unenroll and reenroll the contacts into a new sequence? (as opposed to typing in all the contacts one by one again)
If your question is whether contacts can re-enroll where they left, that's currently not possible.
Could you rephrase what you're trying to achieve? Do you want to create tasks for contacts already enrolled? This could be done by filtering contacts on the contact index page for Last sequence enrolled + Last sequence enrolled date and creating tasks for all contacts in that filtered view, for example.

It would be super helpful if you could make changes to a sequence and those already enrolled would get the updated sequence rather than having to unenroll and enroll again.
