I am currently using the Hubspot free plan, and was wondering if it's possible to set up an offline bot that can accept a message when all team members are away?

Hi @VG13,
Yes, under Settings > Inbox > Inboxes you should see your chat. By hovering your mouse over it, an Edit button should appear and you should see a Configure, Availability and Tracking code tab. Under Availability, you can specify the default offline behavior:
During this time, contacts can still submit messages but will see whatever you define here.
Additionally, under Menu > Conversations, when you edit your live chat, in the Build step you can also specify that you'd like to capture the email right at the start so you can more easily follow-up with contacts:
