We're relatively new to the Hubspot CRM and so far love it. We're trying to develop good strategies and practices. Our business deals with long term projects with clients (i.e. we'll get a lead in January and not execute until 8-24mo later). I'm trying to figure out the best way to workflow keeping in touch with those clients. We currently use tasks "follow up with X customer" and set a date. Date comes, we follow up, then adjust that task out for another X number of days/weeks. Is there a better way to keep these "reoccuring" or follow up approaches? Open to any and all ideas!

It sounds like your approach is solid right now though — you just want to make sure that you stay top-of-mind for companies during this long sales cycle. Manually creating tasks for reps to reach out every so often is definitely a good move!
Do you have any sort of ongoing email marketing, like a newsletter? If so, be sure to include to these folks in the mix. Maybe you can update a property (like "Lead status") to indicate which records should be nurtured. You could then keep a list of all contacts who should receive ongoing communication for better tracking and easier email targeting.
If you ever upgrade to a Professional HubSpot subscription, you'll have access to automation through the workflow tool. Workflows can automatically create tasks and automatically send nurturing emails when certain criteria are met. You could also use workflows to identify contacts that haven't been reached out to in some time to ensure that no one falls through the cracks.
