From a first glance, this would require custom code actions, available in Operations Hub Professional: https://developers.hubspot.com/docs/api/workflows/custom-code-actions
Using custom code, you could sort records in a workflow, then set a property value to categorize them accordingly.

Unfortunately not, no. Calculation properties don't offer this level of sophistication.
