Yes, this is possible, just a bit hidden among a lot of other options. When you add the "Create record" action, you have the possibility to "Copy a property to a ticket property" (blue button, scroll down a bit). I've recorded my screen.
This allows you to copy values from the source record (deal) into the target record (ticket).

How would we copy over this information if the Ticket has already been generated?
At my compnay we've decided to copy over the Deal Owner to a custom Ticket property after a year of using HS already, due to the two objects being managed by two different departments and new staff coming on board with minimal HS understanding. The transferring of who managed the Deal being accesible in the Ticket property is to help mitigate this friction.
